This is an easy great way to make Mexican Rice – yes even when you are in Mexico because they have all of the best ingredients to use!!!

We actually haven’t had Mexican Rice many places here in this area of Bucerias, Nuevo Vallarta, Puerto Vallarta, Sayulita Etc… the times we have had it it hasn’t been that great! So we make it at home! Chipotle Peppers will make it very very spicy but still so good and the next day it still tastes great too!

Just make sure to reheat the serving of rice you are going to eat that day… reheating rice multiple times has the potential for an unhealthy bacteria to grow on it!
